Upscale Chicago eatery cooks up fast-casual concept

One Off Hospitality, the parent of Chicago fine-dining eatery Avec, was working on a chicken concept called Avec Rotisserie before the pandemic hit, but the need to pivot quickly to off-premises spurred the company to launch it as a virtual brand.
