Restaurants map fast-casual growth plans

Numerous full-service eateries have planned, launched or expanded fast-casual concepts during the pandemic and many are poised for future growth. Fast-casual chicken concept Fuku has expanded and helped keep parent Momofuku Group afloat, while Chicago fine-dining eatery Avec is turning its ghost kitchen brand, Avec Rotisserie, into a standalone format.
